FISH STOCK

INGREDIENTS:
1.5kg fish bones
3 liters (12 cups) water
1 medium (150g) onion, chopped
2 sticks celery, chopped
2 bay leaves
1 teaspoon black peppercorns

METHOD:
Combine all ingredients in a large pan, simmer uncovered, 20 minutes, strain.
Makes about 2.5 liters (10 cups).
